Simple sun for February half term - not for kids

Dh and I would like to take a few days/a weeks break in February half term or a week either side (no kids at school but I am at college, but could possibly miss a week).

Must be sunny, doesnt have to be boiling, just warm and bright.
For good walks.
Swimming a bonus.
Not full of children as we've spent 20 years doing that.

We've never had a sun break at that time of year so we are a bit clueless.

Any recommendations welcome 🙏

Possibly Madeira, but you'd need an inside pool if you want to swim!

Madeira wonderful for walking. The Canary Islands outside the resort towns have good walking and are sunny and bright (the resort areas are warmer). Morocco fantastic too - chilly but bright in the north, warmer as you get down past Marrakesh and onwards, great walking.

I've just booked the Gambia at a similar time of year, 28 to 30 degrees, 6 hour direct flight and no time difference. Plenty of adult only hotels. Lots of bird reserves etc for walking.

DH and I go every year in January or February to Lanzarote. Other Canary islands are available. Plenty of adult only hotels.
It's reliably warm and sunny during the day. You might get the odd half day of cloud or a spot of rain. Can be chilly enough for a fleece outdoors in the evening or it can be 20C at 11pm.
This January we were particularly lucky and it was glorious all week. We did lots of walking and I swam in the sea (though that was cold).
Don't know about bird reserves though we do like to spot birds as we walk.

I’ll also suggest Madeira, lovely for a couples holiday.
