Greece hotel recommendations

I'm looking to travel to Greece next June with my husband and 11 month old and I'm looking for recommendations for the following:

Hotel in either Crete, Kos or Rhodes
All Inclusive
Must be baby friendly (baby pool/park/indoor play area)
Must have choice of restaurants
Must have good choice of alcohol (some hotels I see the cocktails lists are very bad)
Within 1 hour drive max from the airport

I've found most the all inclusives in Kos and Crete are on the outskirts of towns so it's quite a walk to enjoy the village/town itself so worth checking the location for any recommendations

We go B&B in Greece as there are so many amazing places to eat and drink but completely understand why you'd want it.. we go AI in canaries

This place is wonderful but not AI. (You have to pay for drinks) British Airways and TUI go there (we got a good deal in the BA Xmas sale)

We stayed at the lindos imperial in Rhodes with DS, loads of pools never too crowded, right on the beach and we had a two bed family suite with sea view so plenty of space to relax when DS was asleep. AI but with a la carte options. It is remote though, but car hire from the airport was very reasonable and the roads on Rhodes are so quiet.
We're going to Crete next summer ds is a bit older and there's more to do, Knossos, spinalonga, crissi island , lasithi plateau etc.
We will hire a car again. I love the greek islands
