Help! First holiday as single parent on a budget

I am saving hard to take my 9 and 13 year olds abroad for the first time post-divorce. Thinking Spain?

Needs to be-
Fly from Manchester or Liverpool
All inclusive

Unsure whether to aim for Easter (April) poss not very warm or May holidays

Any advice greatly appreciated ☺️

There's a danger that things might be not fully open yet (in addition to the weather issue) in some places at Easter. May would be a better bet.

(Though I'm not sure if some resorts (the bigger busier ones) might be lively, even at Easter).

A lot of people I know have said good things about Salou and around there for family holidays. There seems to be a lot of accommodation and plenty of good deals.
