Amsterdam in December

I'm looking at visiting Amsterdam in December for 3 nights and am hoping for some accommodation recommendations and of things to do please?

Accommodation around £500 or less. Is it worth waiting until nearer the time and hopefully getting a bargain or are the best places likely to sell out?

I'm thinking so far Anne Frank's house and the Christmas market. Is a canal boat tour doable in December?

I've stayed at Pension Homeland. Previously, it was used to house navy officers. It's got a 1970s theme and is close to Centraal Station. Staff are friendly, and the outside has amazing views. Breakfast is really good.
