Recommendations for winter sun, swim, quaint wee shops?

Hi all, a friend and I would love to take a break in November for a week in the sun, within reasonable flying distance of the UK (specifically Edinburgh). Would love to go somewhere pretty and quaint with decent weather and wee villages where we could sit in cafes and people watch; drink, eat nice food and chat. Quaint wee markets and shops. Cobbled streets, that kind of thing. Nice hotel to totally chill, read, swim in a heated pool and preferably adults only. A nice spa would be very welcome! I know these places will be out there but I've no idea how to find them. Been to Morocco a couple of times and loved it but want to try somewhere different. Any suggestions please?

Maybe 3-4hrs ish? And by warm I mean temperature in the mid-20s maybe. Neither of us are sunworshippers as such but it would be nice to be warm enough to sit on a sunlounger and swim in a pool without being absolutely freezing 😂

Morocco? Although quaint, it isn't.

Canaries?

Maybe south of Spain? Seville?

That's about your limit for short flight and a hint of warmth.

Seville might fit the bill. You can fly on Ryanair from Edinburgh.

You'd definitely get the cafes, food and cobbled streets and there's plenty of 'city break' culture. There's Arab baths for the spa bit and might be some hotels with a hot tub or small rooftop pool, but possibly not open in November, that's the only sticking point. Otherwise it's a good choice, weather should be mostly good unless you're unlucky with a storm but they're mostly short lived.

Malta but be careful where you go. Some is quaint, some tacky. I don't think it will be that warm. Hilton malta has an indoor pool / spa and easy taxi ride to valetta.

Seville is gorgeous. Beautiful. We did 2 days there and 2 in Cadiz. Could have easily done longer in Seville. And you could do Cadiz as a day trip.
We went at Feb half term and weather was mid 20s.
