Winter Sun (Jan) with toddlers kids club?

I can really only take time off in Jan for holidays abroad because of job & caring responsibilities.
I am a solo parent of a child who will in 3 in Jan.
Was hoping to find some shortish haul winter sun with a kids club or vetted babysitting so I get some R&R myself too.
My child has flew long haul before and loves nursery/childminders etc so I think that aspect of it will be fine.
I'm just new to holidays with a child and I haven't got a clue where to start!

Trying to talk myself out of Mexico (not AI) or SA as I loved those places, but I don't want to push my luck and I need a proper break and some vit d as I find winter so long

JA The Resort in Dubai and TUI Blue Sensatori Coral Sea in Egypt would be my recommendations. At both resorts, the primary language was English and I felt very comfortable leaving my dd in the childcare.

@Forgottenmyphone I was looking at Coral Sea so I'm glad it comes recommended. Would this be suitable for an 18 month old too?

@PurBal Yes, it would be perfect with an 18mo. The baby club takes children younger than 3 and you can hire equipment including a play pen, pushchair with a parasol, cot and highchair.

Dubai (especially) & Egypt aren't places I really want to go to Sad

Club Med? A lot of them have childcare for that age and they are all over so you should be able to find one in a destination that appeals. We went to one in Cancun when DD was 2 and whilst it’s not a destination that I’d rush back to if flying all the way from the UK (we lived in the US at the time) I couldn’t fault the resort or the childcare.
