Holiday with older teens/young adults

With our youngest dc off to uni next year (sibling already at uni) we thought we would like to do a last big family holiday as it were.

Was thinking possibly a Caribbean cruise (never done one) or maybe WDW/Universal in Florida. But we can only go end of June to beginning of September. Easter is out due to exam season afterwards.

But I'm not sure the weather is ideal for those places so looking for recommendations of what people have done with their kids at this age.

Canaries are good all year. Northern Europe good too eg Croatia.

July / August is hurricane season in the Caribbean so I'm not sure a Caribbean cruise is a great idea. I think it depends on your budget and what your teen /adults like?
If you like beaches, I'd stay in Europe that time of the year.
Further afield, Sri Lanka is a good bet for that age - beaches, safari, culture and great food.

Florida is too hot in the summer plus they are too old for WDW!
I'd rent a nice villa in Spain with a pool and near the beach and a town - not near a big tourist place though, but with enough going on. I took my 19 and 20 year old to just such a place, had my sister and her young teen join us from another country and it was great. Days spent by the pool, exploring the local town, going to street markets, eating out, beach. No TV so Scrabble and other board games most nights.
