Long haul recommendations with a baby

It's my Husbands 40th next year and I'm looking to book a surprise holiday for him, it will be the 2 of us plus our 11 month old baby.

We love SE Asia as spent a lot of time traveling that region so I had planned to book Thailand and Singapore but then I read yesterday they they recommend Hep A vaccine for Thailand and baby is too young.

I'm now looking for suggestions of other locations we can travel.
For a long flight it needs to be somewhere that can be split up half way (Qatar was where we would have stopped on the way to Thailand) as I don't want to fly more than 8 hours nonstop (we are flying from Spain)

Any suggestions of special destinations to celebrate my Husbands 40th where additional vaccines aren't recommended?

Mauritius might be good as minimal time difference, no malaria or vaccines required.

Honestly, I would bring it forward and go before your baby is mobile. Long haul with a crawling or cruising baby will be a lot worse than one that can't escape.

Azores? Nice temperatures, can connect in Portugal for flights. Not sure if it counts as long haul enough.
