What do you like to do? Do you want to eat out or self cater or all inclusive? How are you with heat? Beach or mountains? Will you fly or drive or train? How much do you want to spend and when do you want to go?

We want to fly , be at the beach. Somewhere warm but not 40 degrees hot.
Flexible on food situation.

Honestly OP, this is a question that's a bit like how long is a piece of string.

Abroad is a big place ;-)

I suggest you pick up some brochures from your local travel agent and get inspiration from them. Then, once you've narrowed it down a bit look on the holidays board here for further advice/ inspiration.

Or come back and ask a more specific question. Have fun :-)

Tenerife - it doesn't get mega hot and there's loads to do e..g Teide, whale watching, snorkelling, Siam Park. Loads of travel companies go there so there are plenty of options for different budgets. Only downside is 4ish hour flight and it isn't particularly scenic.
For a first time family trip it feels ideal though.

@Heartattack41 Salou's great for families. You could visit Port Aventura theme park and do a day trip to Barcelona or Tarragona. You're unlikely to get large single sex groups so quite peaceful.

If you want AI -Tenerife, The Bahia Principe Fantasia. Not the cheapest, but great for families. Great splash pool, 2 other swimming pools, best AI food I've ever had. Right on the coast, not too long a transfer time. Kids club, nice a la carte restaurants etc. Get a suite so you have a separate space for the child sleeping area. We had a sea view suite which was perfect.
