Advice for UK holiday with disabled 2 year old

We are planning a family holiday in the UK in June 2025 and I'd welcome some thoughts on where to go.

There will be 5 adults (4 in their mid 30s and one 70 year old), an 8 month old baby and a disabled 2 year old who cannot walk (although we are hoping she will have a powered Wizzybug wheelchair which can be used both inside and outdoors).

We are thinking of renting a holiday home on the assumption this will be easier with the babies. We would like somewhere with a beach but obviously there is no guarantee that we will have beach weather so we are looking for somewhere with things to do if we have another summer like this one.

We are based in Bristol, London and Kent so would like somewhere in the south of England. Not Cornwall though as we have relatives in Cornwall so we know Cornwall well and would like to go somewhere different.

We have thought about Ventnor or Shanklin on the Isle of Wight, north or south Devon, or the Channel Islands. We don't know these areas. Is there enough to do if the weather is awful?

Any ideas gratefully received.
