West Midlands safari park? On the expensive side but you can stay within the animal enclosures (in lodges obviously 😂) and wake up to see giraffes wandering around

Landmark trust has places on Lundy island which include lighthouses, in winter get there on a helicopter.

Budget?

Murder mystery weekend at burgh island was fabulous apparently. Same couple also did a weekend in a haunted castle and went game shooting which was turned into a banquet. Neither are cheap, I'd rather a week somewhere warm

I did think of a canal boat....I might look into this further.
Budget not huge (definitely not enough for a week abroad instead) but it is a birthday gift.

There’s a Facebook group called Extreme Day trips and people fly off for £30/40 for the day to Venice or Monaco- if you can get the cheap early morn flights maybe stay one night? I can’t believe how much some of them get done in a day.
Or fly to Bucharest to the Therme Spa. It’s around £30 for the day at spa (depending if you buy the ticket for full access or not) and easy to get bus from airport to the spa. Fly back late that night or next day.

London zoo sleepover next to the lion enclosure (similar to PP post about West Midlands Safari) .
A night in an actual castle - there are quite a few round the Uk.
