Does anyone know why flights to New York jump from £233 to over £1000 on 20th March 2025. Easter holidays aren't until a month later?

Maybe because mid to late March is spring break time for uni's in the States.

You may just be looking a tad early. Most flight companies release their flights 330 days in advance, so I’d maybe recheck in a few weeks.

You might be running up against BAs limit of (I think, very much open to correction) only allowing booking within (?)355 days prior to departure of the final sector on the booking

I think if you try to book outside that window the system either ignores the return and initially presents the one way fare for the outbound sector only (and singles are almost always expensive) or won't take the booking at all.

Whatever the reason I'd wait a few days and then try again
