A week in May, adults only, Croatia, near a beach, ideally cycling and SUP lessons - any suggestions please?

Looking for suggestions as in the title: 7 nights in Croatia in May, adults only hotel/resort and I'd prefer not to do fully self catering as it's a holiday 😀so at least breakfast included.
We'd like to be near a beach and ideally be able to hire bikes and maybe try stand up paddle boarding as we're growing older disgracefully (we're in our early 60s 😂)
Any suggestions of places that you've been to and would recommend?
Budget is £1200 pp

We went to a beautiful hotel in Caveat last summer - Hotel Supetar. Very boutique and small. Excellent service but not snobby. They would pop a sweet treat or a nightcap on your pillow every night and appear with platters of fresh fruit when the sun got too hot! Only 12 rooms so a real gem.
It's next to a pebble beach for swimming and a 30 min boat trip to Dubrovnik. You can certainly hire bikes and SUP's in Cavtat. I would go back in a blink and I very rarely say that!
