Top half of Europe in August - suggestions please

DP, his 22yo daughter and I are looking for a holiday together in August (could go last week in July but have to stick to the school holidays for me, much to everyone's annoyance).

We've been batting ideas around about Jutland coast and the Baltic coast of Germany - not fixated on these but looking for reasonable but not boiling weather, a few walks, some bits of culture/interesting places to explore, possibly a coast/city mix. We're quite foodie (greedy). Not camping.

Quite open to suggestions that don't fit exactly what I've said here, too!

If anyone knows of lovely places, please suggest.

West coast of Jutland is beautiful and very quiet. Pick anywhere from Esbjerg all the way up to Skagen, which itself is a nice place for a week. Alternatively, look at the Jutland east coast and Djursland - stay in Ebeltoft (which is only 15 mins from Aarhus Airport) or in Aarhus itself. Hire a car and you have the whole of Jutland within an hour or two's drive - Billund (Legoland, Lego House), Jelling (Vikings), Silkeborg and the lake district, Randers, Vejle, Kolding and all the way down to Christiansfeld, Sønderborg, Ribe and Tønder.

Aarhus in Denmark is a very attractive city with lots of culture and some white-sand beaches nearby, such as Grenaa, Bonnerup and Femmoller.
