holiday on a budget

we are looking to go away in September for a week ,flying out of edinburgh, with a 2.8 yr old.

we would like to stay within europe.

we are on a tight budget and wondered if anyone had any recommendations of hotels in a kid friendly resort with a pool and near a beach and with local restaurants to eat out at night.
