Weekend with DM

Looking for suggestions for a weekend trip with my DM next spring to celebrate a special birthday. Going without children.

She likes beaches, nice Hotels, sightseeing but not traditional museums (more like castles or strolling around), a bit of luxury (window) shopping. She is not great with experimental food, more on the conservative side with regards to food. Is fit and can walk well.
ideally Europe but have also been thinking about Dubai (a place she is interested in but her DP would never go). Is Dubai too far for 3-4 nights? I can’t stay longer because of kids.

i also thought about Barcelona, Nice (and visit St Tropez) and Paris. She wouldn’t enjoy Berlin or Amsterdam for example.

Not considering Italy, England, Austria or Germany - she has traveled in those countries a lot and I want to take her somewhere new.

My daughter went to Barcelona and found it to be a bit grim. Belgium has good food, nice people and quite a few cities to visit.

Malaga. Great shops, lovely historical bits/ streets to wander, nice restaurants especially at cruise ship port, short flight, good weather.

Palma de Mallorca - compact, good shopping, nice beach, very safe.

Florence - beautiful, lovely shops.

Yes, I was going to say Malaga as well. And plenty of glam and shops at Puerto Banus.

Nice/Monaco/Menton is lovely in the spring, so light and bright, a real pick-me-up.

That’s my favourite atm and I know my DM would be interested in people watching in Monaco. I have been to both places (Nice and Monaco) but not Menton. What’s it like? Or should we do St Tropez or Cannes instead?

How about Lisbon, I didn't do any high end shopping, but I imagine it exists, and it otherwise ticks the boxes. Dubrovnik and Split also fit the bill, and Croatia is hard to beat, though again not sure about shopping in these places and the beaches are normally pebbly.

Palma would be great. Fab shops and lots of people-watching. Cathedral, castle, Pueblo Español https://pem.city/, and you can gawk at Michael O'Leary's (of Ryanair fame) mansion. Huge choice of food, including places run by Brits. El Puente https://maps.app.goo.gl/YzqgoNWwYnQKGDx67 is not run by Brits but it does a shoulder of lamb for 2 that is like a really good pub Sunday lunch. Take the old wooden train up to Soller for a day out.
