Gran Tagoro Playa Blanca is very toddler friendly. Buffet has loads of veg / salad / pulses/ pasta / bread/ potatoes / v paella etc and is good quality.

Most hotels in Lanzarote and restaurants will cater for any food requirements.
Playa Blanca.
The Elba.
Princess Yazia.
Relaxia Lanzasur club.
H10 Rubicon Palace

Roca Nivaria exceeded expectations trying to cater for the vegans in my family.

You will struggle when out and about but some hotels do cater.
I have stayed in the Iberostar Lanzarote Park. I am not vegan or vegetarian but DS is veggie so I do keep an eye on what's available.
They had sections of the buffet for vegetarian , vegan, gluten free etc. also usually a vegetable paella most days. I can't remember whether puddings were vegan but there was a whole GF section which suggests there might be vegan.

Do watch out for labels in other hotels as they have a habit of throwing ham into soups and vegetable dishes. My son found this in the hotel Mirador Papagayo
