Summer holiday with teens

I'm hoping for some words of wisdom here. I'm wanting to book a lovely family trip this summer for my husband and two teenage kids. As teenagers they get bored on beach holidays and they are both quite adventurous and keen to explore. In the past we have been to the Rockies and toured around (booking everything ourselves) and last summer we went to Sri Lanka and toured the whole island and loved it, especially the 5 days at the end by the beach. All apart from one thing....they are too old for a family room and so my husband and son shared a room in most of the hotels (which made it very expensive), but also they just rubbed each other up the wrong way! So I'm keen to avoid the hotel situation again.
It's my 50th this year and I suspect it will be the last year my daughter will want to come on holiday with us so I want to make it special. Ideally we have a really lovely budget of about 12k. I'd love to go to Costa Rica, but have been really put off by the weather in kids summer holidays and also how would I do that if not in hotels?
Other places I'm interested in are Vietnam, Thailand but again put off by weather.

Where else could we go. I've thought of Greek islands but isn't that just beachy? Also thought of combining Lake Como with something else, but not sure what.
I'm a bit overwhelmed and no idea where to start. HELP!

Was your Thailand trip in the July/August holiday? We're thinking of that for this summer.
Costa Rica is expensive but amazing.
We did it backpacking last summer as mentioned above.
Cost about 3k + flights staying in basic accomodation and mostly self catering.
We didn't scrimp on activities though.
I imagine about 10k in hotels, eating out, hiring a car.

@House4DS yes July/ August holiday. Was so much fun. If I did it again I'd stay longer in the jungle and Ko Phangan and miss out Ko Samui as it was too commercialised for me. Loved Thailand.

We similarly enjoyed a three week tour of Canada a few years ago which was brilliant.

This year we are planning a summer tour of the Alps! We are driving via the eurotunnel, stopping for a night in Luxembourg, 2 nights in Stuttgart (to see the Porsche/Mercedes museums), 1 week on a resort in the Austrian Alps (we have a suite with adjoining bedrooms and it is AI). 5 nights in Grindelwald in Switzerland in self catering house and a final night in Reims. We might extend by a night or two. In the cities we have opted to stay in hotels (1 double room and 1 twin - teenage boys who won’t share a bed but will a room). The alps seem to offer loads of outdoor activities - lake swimming, water parks, white water rafting, walks, mountain biking as well as all the sightseeing.

What are the details of the AI resort in the Austrian Alps please?

@Jessica60 Hotel Bergland in Seefeld. I’ve also heard positive recommendations for Hotel Haymon on mumsnet.
