Holiday advice needed - Feb half term

I have had my own holiday home in Spain for several years, so enjoyed winter Sun there. Recently, I sold up and bought in France. While it has many positives, I will miss my winter sun. I have only ever stayed at my own house, with friends or organised my own rental, flights, hire car etc. Never had a hotel based holiday, other than the odd city break. However, my sister and I have decided that we are going to go away each February half term to get some winter sun and try new places. My advice request is twofold:

Where can we go to get some sun in February? No Costa Del Sol or Costa Blanca please. I would prefer short hall. Pool or beach with the ability to get out and about. I am a confident driving in Europe so could hire a car.

Who would we book with? As mentioned, I’ve never had a hotel holiday! Should I organise myself or go with someone like Jet2? Which companies would you recommend?

I've done Spain, South of France and Italy in February and unfortunately Spain was the only one if didn't rain in. Still fun being away but if you want sun Spain is the obvious choice.

I think Canaries or Morocco could be good from others peoples holidays though.

Personally I would just book an Airbnb with a pool or near to a beach and a largish town.
A cruise could be a good option once you get over the concept. P&O have one for £800 pp for a week in a balcony cabin to the Canaries including return flights to Tenerife. You can see a few ports ( often near a beach)- hire a car if want , drink and eat all day and you get a pool. I prefer MSC who I am sure will do a similar one.

There’s no short haul winter sun in February half term! Canaries are your best bet at 4 hours but expect low 20s and possibly wind.

I really enjoyed Madeira last Feb half term. Booked independently and it was £££ cheaper than the exact same offer with Jet2.

We went to lanzarote one half term, lovely weather for the first two days and then torrential rain. If you want a guarantee of warm weather, either book near the time or go to the Caribbean
