Summer holidays with 3yo - send me your recommendations in Europe!

We want to take our 3 year old on holiday first 2 weeks of July. We usually go for self catering Airbnb but found last year our holiday didn't feel like a holiday and more like survival with a 2 year old. This year I want to try an all Inc hotel (I don't want to clean, cook for 2 weeks) and would like enough activities/facilities to keep everyone happy - gym, pool, kids activities, potentially a kids club, beach. Preferably not scorching hot.
Don't mind where - Spain, Greece, Corsica.
If you've been somewhere amazing please let me know.

The issue is that most of southern Europe will be hot.

Have you thought about Italian Lakes? Or Kinderhotels in Austria?

I personally found hotels with this age group worse thand s/c. We had an early riser and I hated not being able to have breakfast but to wait until 8am when the hotel restaurant opened.

DD was also a nightmare to sleep in one room with, so the hotel costs are higher and her going to bed late didn't mean a late getting up, it meant an overtired child.
