Spa or near a Hamaam is pretty far up priority list, would like it to be near places to eat/ not to far from the markets.

Budget is around £300/night

The swissotel is great but not sure it meets your location requirements

Sura Hagia Sophia Hotel. Stayed here in 2019. Lovely hotel and very central. Within walking distances of lots of attractions including blue mosque, grand bazaar.
