where to go / what to do.

Andalucia would be my recommendation - Seville, Granada, Malaga. Depending on how much sightseeing vs relaxing and how long you want to go

Crete is lovely that time of year

Jordan, sights, finishing at the Red Sea for RnR. It’s a great country.
