Anywhere in Europe - two to three hour flight.
Sunny.
Open spaces.
Walking distance to a town or village.
Beachside (preferably)
Adult only but not a deal breaker.
Less than £2,500 per adult for 10 days.

I think I'm probably expecting far too much. 😉😀

Hotel Maristel in Estellenc in Mallorca. Mountainside Hotel but beach isn't too far to get to.

I was just coming on to post the same place! Great spa, lovely area, by a beach (albeit rocky), lots of stuff to do. It’s not adults only though. You could look at Monte mulini next door instead (which is adults only).

Senator Banus near Estepona

Our family has an apartment across the road from this hotel. It is sumptuous. Close to beach and many nice restaurants on both sides of the road. Regular bus or taxi to Puerto Bantus, San Pedro, Estepona and Marbella. 40 minutes from airport. The Kempinsky Bahia beach hotel up the road beachside is great also.

We’ve stayed here. It’s a walk into Funchal, capital of Madeira and set in a lush botanical garden. It’s not beachside but is closeish to the sea. Very few children there and an additional adult only pool. That said, my daughter was the only child ever in the main pool.

This might fit the bill, it's an amazing hotel (L'Artalan) in the centre of Arles (fly to Marseilles). Gorgeous town for wandering around and lots to visit nearby. Nearest beaches are a bit of a drive, I guess about 30 minutes, but the Rhône river is barely a minute's walk.
