Ideas for special NewYear break for son’s big birthday

My son turns 21 on Christmas Day. He doesn’t want a party so I’m thinking of making it special by sending him and his lovely girlfriend away for a New Year break (3 or 4).
The trip could be in Europe. Girlfriend May chip in. But I’d like it to be memorable. They aren’t nightclubbers but need something going on - they are a young couple after all😊
I think New York is probably beyond my budget even though that would be amazing.
Can you suggest anything?

Budapest might fit the bill - lovely city with some amazing bars, river trips (with or without prosseco!) and some great spas, including the famous Szechenyi Baths. Very reasonably priced, and popular with young people.

New York can be savagely freezing 🥶 in the winter

How's Marrakech at that time of the year? We went last autumn and it's full of history, chaos, amazing sights, smells, food. Can do to the desert. We stayed in a riad but others choose the big hotels and taxi in.

I had a big NYE birthday this year and we went to Iceland. It was freezing but amazing.
