One way ticket for a short trip

My sister is having her wedding abroad (within the schengen area, we are in the UK). DH has a phobia around flying so will be driving there and back (will take him about 2 days!).

My plan is to fly over with my sister and help her get ready, and then drive back with DH so we can have a scenic road trip.

I've now heard there could be issues with the airline allowing me to fly with a one way ticket if I can't prove how I'm getting back. Does anyone have any experience with similar journeys?

People mix airlines to save money all the time, it’s not remotely unusual to book one-way tickets short haul (less so long haul when it’s not price advance to do so). In the unlikely event that immigration asks you, because they’re the only ones that might care, just make sure you’ve got proof of your return journey e.g. email confirmation of the eurotunnel booking.

ive only been asked when entering a EU country how long i was staying for, and the purpose of the visit, never needed to show a return flight
