So we are finally in a position to be able to spend some proper(ish) money on a holiday, 5k probably, 2 adults and 1 child. Japan and Canada have always been the dream destinations, no a clue about either, any recommendations or advice please?

That price seems good for 3, you need to find out when Golden Week is, that’s the main public holiday period which is around our Easter but is probably early April at the latest.
late April/early May would be a good time I reckon. Japan is very crowded at all times, so I don’t think you can think too much about wanting to avoid the
crowds, but avoiding golden week will be a good start.

i recommend avoiding that week if you can as it’s basically a week long public holiday and everyone is off travelling pushing up prices and crowding the main tourist sites.

later in May weather should still be ok
April better as you’d Catch the cherry blossom that they go bananas about

Thank you @StillWantingADog that's exactly when I'd priced up for, really good to know, I'll keep looking and try to tweak it a bit.
