Best family holiday destination for end July? Help!

Hoping the Mumsnet hive mind can help me. We need to book a holiday for this July at the start of the summer holidays for me, DP and DS (nearly 5). We never go away and are both always totally focussed on work all the time and although we vaguely talk about holidays we never actually book anything. I think also it's partly fear of booking something rubbish that puts us off. I've started looking but I'm completely overwhelmed by choice and not wanting to waste money or choose wrong so feeling a bit paralysed. Can you help? Parameters are:

Not too hot or humid - between 21 and 28 degrees would be ideal.
Family friendly is key with things for our son to do.
Ideally we'd fly under 6 hours but open to suggestions further afield.
Budget-wise we're happy to throw some money at it as we so rarely go away this accounts for about 5 holidays rolled into one!

Can anyone recommend somewhere amazing they've been?

I only know about short haul/Europe and most places can get hotter than 28 degrees in the summer. Even those places that you would think cooler can get really hot and often more humid.

perhaps Brittany may be a safer option weather wise

not considering the heat, we have had wonderful holidays in Lanzarote, Cyprus, Malta, Turkey (Cirali), Menorca and Majorca

i expect someone can recommend
long haul cooler places!
