Sorry if this is a numpty question 🙄. I usually book package holidays or weekend city breaks so I haven’t had to think about it before but I’m booking a flight and hotel separately.
I want to book a 20kg suitcase for there and return for my husband and I so when the website asks e.g. EasyJet - how much 20kg hold luggage do I want is it 2 suitcases as in 1 per person with 1 suitcase there and back or is it 4 as in 1 there and 1 back for each person.

On Easyjet and Ryanair you book suitcases/hold luggage for each leg of the journey.

If you are taking one suitcase per person, then that is what you book for the outward journey (and you book it per person - so put one suitcase on Mr Von's booking and one on Von1471's booking) and then the same on the return flight when you come back.

If you are sharing one 20kg suitcase between you, then just add it to one person on the outward light and the same on the way back.
