hoping you may be able to help as a bit confused!
I have a ( non fee) AMEX card and I’m using my companion voucher this year to go to Dubrovnik. Is the only way I can book business class flights by getting the fee paid one? And if there are 3 of us how can I book 3 flights?! Thank you!

You can only use your companion voucher for one other person.

You need to search for 'Reward Flights'.

One tip that might help, I use our companion vouchers for longhaul flights - business class preferably - as it is a much greater saving. May not apply to your circumstances though.

This is for a fee paid card though.

Yes, we have the fee paying one and I think you need it to use it for business

Yes, but you could take out the paid card, use it then downgrade to the cheaper one.

Personally I wouldn’t bother with busines to Europe. It’s not materially better than economy imo. Ideally save your Avios for long-haul business if you can accumulate enough.
