Suggestions end of March UK/end of June Europe

Suggestions please for destination and nice mid range price hotel end of March for a couple for a couple of nights NE, NW or bottom half of Scotland?

Other suggestions for destination for a couple hotel in Europe (Spain, Italy, Portugal, Croatia etc etc) for 4 night holiday for couple end of June early July. Not just a primarily beach holiday.

Thank you all of a sudden DS is at Uni and DD is going this years so we want something and somewhere nice to go that we would enjoy for both shortish trips whilst we slowly get used to this chapter in our lives (but that won’t break the bank as we are subbing them both at Uni and have to pay for a new bathroom).

For the UK so far I am thinking maybe Doxford Hall
out of the recommendations so far. @Fivemoreminutes1 have you stayed there recently? We used to really like Ambleside for a but of a wander and relax but were disappointed with the place and hotel last time.

For Europe in late June still thinking somewhere in Italy (but not the Lakes and not as busy as Rome, Florence, Venice), maybe Porto, Spain or Croatia. We really would like a hotel to properly relax as I definitely don’t want to do any meal prep, shopping or cleaning.
