Would ideally love snow, ice skating & a beautiful old town that the kids would enjoy..
Veering towards Tallin at the moment but open to all suggestions!

For guaranteed snow you need to go fairly north I think. Germany, even Bavaria, is a hit and miss in December.

We’ve been to Salzburg in December and had snow, and my parents went the following year and also had snow.
The Christkindlmarkt in the biggest but there are lots of smaller markets tucked around the city too. Also, if you head out of the city centre, Christmas market prices tend to be a bit lower. The Hellbrunn Palace’s market was our favourite. It’s also possible to take a day trip to local villages on the shores of Lake Wolfgang which each have their own markets.
There was an ice rink by the famous Mozart monument.
