Where are you entering the country - Dublin/Cork/Limerick (Shannon Airport)/Belfast?
That will determine where we start our suggestions.

I'd think Donegal would be a fabulous place to visit. Real rugged landscapes. Then Sligo/Mayo/Galway would be next. Clare and the West Coast of Ireland along the Wild Atlantic Way, you can't go wrong.

😆I realise that some might want 6 counties back at some point in the future but I was wondering if part of the deal was that we also got the Isle of Man, Isle of Skye, Isle of Anglesey and some other territory too

OP, Ireland isn’t cheap. There won’t be any bargains. What kind of thing do you like doing, so people can recommend?

We had a great holiday in Connemara one year. We stayed in Letterfrack and visited Clifden and Galway. Stunning beaches.
