Holiday with 1 year old in April

Could anyone help with recommendations for a holiday for two adults and a 1 year old. Looking for something low stress but a bit special as we have been given some money to 'enjoy' after a bit if a horrid time.
Was considering Italy but I am not sure where and a bit worried about the crazy roads with a baby.
We enjoy good food, history, nice scenary.
A nice family friendly AI seems easiest but also a bit dull seen as we won't get to enjoy sunbathing or drinks as much with a baby. Baby won't enjoy kids activities yet so a kids club wouldnt be worthwhile.
I guess somewhere easy to travel too, family friendly but not in a low key way, history/ culture/ relaxing. Good for April/ around that time of year.

Do they let 1 year olds in kids clubs? I thought they were more for older children but if that's an option it would be great.

We went Seville and Granada at Easter when dd was 1. The weather was nice but maybe not pool warm exactly. The Semanta Santa processions are fabulous. The Alhambra is a must. Lots of squares to sit on and eat tapas. The Spanish love babies and it's quite usual for whole families to be out quite late.

Try Turkey- took my 16 month old there - absolutely loved it!

Some of the Greek islands are warmer and drier than Italy at that time of year. Crete would be a good option as the average daily max is around 20. For family friendly resorts with nice scenery, there’s Daios Cove and Grecotel Creta Palace.
