2023 activity holiday

I'm hoping to get some ideas...

We've just come back from a week at Center Parcs, which was great fun (me, DH, DS5 and DD4). However, we've been 3 times in the last 4 years and are now finding their activities very "samey".

Next year, DS will be 6 (turning 7 at the end of August) and DD will be 5. Looking at what Center Parcs are likely to be offering as activities for their ages, I'm concerned that they're going to be just the same as things they've already done. To be fair, at that age it's not necessarily a problem, but I'd like to look at alternatives.

Does anyone have any suggestions on where to go for a 2023 summer holiday? We're not ones for lounging on the beach (well, the kids aren't at least!) so I'd like to look at places that offer various activities/places to visit.
