Last minute booking website recommendations

We are looking to book a few breaks in UK and Europe for late August and are thinking about waiting to do it last minute.

Will this save us money and what sites would you recommend?

I often find the opposite, hotel accommodation and flights get more expensive as time goes on as the cheap deals sell out.

I book separately though. Not sure about packages.
