I lived in Granada for three months.
Lovely city, you could take a day trip to the beach and another day trip into the Alpujarras (foothills of the mountains nearby).

Watch out for the 'Feria de Abril' in Seville which is between 8-13 April this year (google if you want more info) - the place will be packed and it will be impossible to find any accommodation or it will be ridiculously expensive. Other than that Seville is a very romantic city - I had my first little holiday with DH there so have very fond memories, but I also second the Granada option.

thanks for these...feria info is esp valuable as we were thinking seville might be an option..is it only in seville, or other cities too?

There was something going on in April in Granada when I was there. Memories are vague but it was a religious festival where they parade a statue in the streets. Town was packed then
There is also a three day street party whose name escapes me where people dance in the streets until the early hours but I think that was in June.

Second Seville and Granada but Jerez and Cadiz are gorgeous too. Cadiz has the advantage of being on the coast and has a lovely beach and great fish restaurants right on the beach. You can fly directly to Jerez.

To be honest, I'm not entirely sure if that fair is restricted to Seville, it's definitely the famous one and I would have thought other cities would be okay. The festival Othersideofthechannel was referring to in April was probably the Easter parades, which happen in every single town and village in Andalucia but Easter is at the end of March this year so you should be fine.
