Holiday cancelled - where should we go instead?

We heard from the travel company today that our much awaited holiday to Japan has been cancelled and DH and I now need to think of where else to go at short notice. We are pretty well travelled having been to most European countries and quite a lot of Asia.
We like to be busy seeing different places, historical ruins, interesting buildings etc. We are happy with a day at the beach but not a week. We're ok with heat. DH is happy to drive to different places so we don't need to necessarily stay at one site. Don't want all inclusive or a family style holiday as we haven't any children. We'd also like it to be reasonably well set-up with health facilities in current covid times. We loved Sicily and Andalucia so a similar place would be wonderful.
Budget no more than £2500 per person to include everything and preferably a little less for 7 - 10 days.
What would you wise Mumsnetters recommend?

Thank you for giving more options. We've already been to Jordan, Iceland, Costa Rica, Morocco, Israel and Slovakia but we'll have a look at Taiwan and some other parts of Turkey to where we've already been.

The Japanese government are restricting the numbers of tourists that can travel there at the moment and you have to be part of a tour (which we were) so you cannot travel independently. You also have to be 'sponsored' by a Japanese tour company in order to get a visa (post covid changes) and I think this is where our problem lay.

Georgyporky , our travel company was Exoticca and the tour is shown in the link below. We've travelled with them 3 times before to Iran, Armenia and Lebanon and never had a problem with them.

Wow @jarviscockatiel the tours on that company site look amazing. We like you are also very well traveled (my husband and I met backpacking in South America 25 years ago) and even so there are lots of destinations on there we have not considered yet. Suddenly, post Covid, our boys are 16 and 13 so there is a whole world of greater adventure waiting out there for us!

We had a private driver and guide (cost more reasonable than you'd expect) and were blown away the whole trip.

Oman is great but you'd be insane to go over summer given you want to see sights rather than just lie on a beach.
