Random pcr testing at airports and proving previous Covid infection

Greece are doing spot pcr checks in their airports and quarantine if positive. Given a pcr can be positive for months after infection how do you prove previous Covid infection so don’t end up on quarantine!?
I’ve tested positive on a home lft and hoping to fly in 3 weeks so could still be positive on pcr . But there are no nhs tests to upload onto nhs app. Would a private pcr test in email be valid?
