Warm holiday destinations in May?

DH and I unexpectedly have a week off work at the end of May (week before half term) so we plan to take DS3 abroad for the week.
We’re after short haul from the UK and ideally mid 20s but not blazing.

We’ve never been on a summer hol in May before (aside from Florida) and usually go away in late June or September and to the Canaries in autumn.

I was thinking Greece or Cyprus? I’m not sure what the Balaerics /Canaries or mainland Spain would be like weather wise at that time of year.

ideally Ds would be able to go wild in a water park or the beach so half warm water would be good (not for him but for me ha, he’s immune to cold)

Greece is perfect in May (too hot in the summer hols IMO)

Ah thanks both that’s really helpful - I was leaning towards Greece or Cyprus to be honest but Spain is a slightly shorter flight ha!
