Easyjet Holiday - Rhodes, Greece - Covid advice needed!

Hello
Looking for advice with an Easyjet holiday we have booked for 1st June to Rhodes, Greece with 7y and 3y old children.
Both us adults are double vaccinated and boosted so looking at the guidelines we shouldn't have any testing completed before entering Greece. But my 7y old is unvaccinated and with the time scale of the vaccine coming out in UK and our holiday they wouldn't meet the necessary timelines now anyway. The hotel is an all inclusive.

Any advice from anyone who has had an Easyjet holiday to Greece recently?
Which company is better for having PCR testing?
Will we need to wear a mask on the bus from the airport to the hotel? If so, what type of mask? Gov website suggests double masks!?
When in the hotel will we need to wear masks moving around?
Do Greek authorities do track and trace, what happens if someone on the flight is positive, are we likely to be quarantined etc?

Sorry for all the questions, minefield of advice and not sure where to start. Holiday was booked pre-covid and would rather not go with all this to delve into!

Any advice welcome, thanks so much in advance!
