Where is "open" over Twixtmas?

Sorry to talk about Christmas now but I want to consider my options!
Basically, I am sick of death of how shit the time between Christmas Day and and New Year's is for us as a family. My children like to get out and about but everything is closed for ages and the weather is usually dreadful. I don't mind bad weather but would like at least to be able to go somewhere with them to break the days up a bit!
Does anywhere know or been to any European countries that don't totally close down during this time?

The canaries is warm and open eg. Lanzarote. Might be pricey. Otherwise Centre Parks?

Tenerife is definitely open. We went just after Christmas a few years back and celebrated New Year there. It was a lot of fun.

It’s sunny and 20ish. We went after christmas and came back suntanned, a couple of rainy days and we went on a trip to the Atlas Mountains where it was snowy, so basically everything!

I have never thought of Morocco, I will take a look, thanks.
Also looking at Amsterdam as there are a couple of museums that the kids will like that are actually open and it's not too far.
