Luxury hotel for May / June

We're looking for something really special / luxurious for a family holiday in Europe in May / June. A resort-style is probably best as we just want to relax and not do lots of exploring and we will be taking my elderly in laws who struggle with walking far or stairs etc.

We will have our little boy who will be nearly 3 by then. We'd like somewhere with a kids club and child-friendly but not necessarily a hotel that is really family focussed as DS is still small and doesn't need lots of activities and in laws need somewhere quiet and relaxing.

Blue lagoon village Kos, Olympic lagoon Cyprus, Voyage Belek Turkey. Out of the 3 the Voyage Belek is the most luxurious and closest to a proper 5 star hotel. I'm not a hotel snob but there's a big difference in European hotel ratings compared to the rest of the world.
