Me and DD are travelling abroad next week, I am single parent but DD has her dads surname. Do I need a letter from him stating she is allowed to leave?

Yes.
The surname is irrelevant really.

You'll now get a load of posters telling you they've never been asked for the consent letter. I travel often with DD and used to work for the immigration service. I'm asked for a consent letter about 50% of the time. You can download a template.

Depends where you are going. I always get asked going to Canada. Have never been asked to mainland Europe but this was pre-Brexit.

Take birth certificate and get a letter if possible.
