Thailand, hotel tips

We are going to Thailand for 2 weeks in March. We would prefer to stay in a hotel, as we usually end up in an airbnb to save money.
There are lots of staggeringly nice 5 hotels for what seems like very little money. We usually holiday in the Caribbean and 5 hotels in Thailand are the same price as a proper basic 3* in the Carib.
Are the 5 hotels worth going for? We are quite happy with something more basic, but can't get our head around how a 3 can be less than £300 for 2 weeks.
When we visit Greece, we always always get money off the hotel price by emailing and booking directly. But this doesn't work in other places like Barbados. Does this work in Thailand?
We are thinking of splitting out time between Phuket and Ko Samui.
Any tips are greatly appreciated.

Recommend the Slate in Phuket, it's phenomenal. Also the Anantara on Ko Pha Ngan if you do go Samui way. But I'd probably stay on the Andaman coast if going for two weeks - look at Phi Phi, Ko Lanta or Ko Lipe, or even Krabi / Railay.

I would also prob mix it up and stay 5 star in Phuket, then 3 star in Lipe. You will get good deals direct with the hotel, but you can also get good deals on the hotel booking sites too.
