Successfully cancelling or changing a holiday

Hi All, for Xmas 2019 we booked a 3 night holiday for April 2020 then we all know what happened to that, we then changed it to Xmas holidays last year and again we all know what happened then and now we are due to finally fly out to Iceland during Xmas break in December

I was really excited and ready for it BUT we now have to take 3 tests (before, during and after) fill in a uk and also an Icelandic form and possibly quarantine when we land (which we physically cannot do due to very important non negotiable commitments when we land) and now covid numbers are shooting up here and in Norway (Iceland is still relatively ok) I just dont want to travel, unfortunately as there are no travel restrictions we are not allowed under any circumstances to cancel or change the dates again (possibly because it’s two weeks away and not the 28 day cut off that is allowed for changes or cancellations) so does anyone know how to get out of the holiday (besides just lose the money and refuse to go) no one I know what’s the holiday (I tried to offer it as a very generous Xmas gift 😆) and as we don’t actually have Covid we can’t go through insurance! We definitely want to visit Iceland but the admin, testing and expense for just two full days just doesn’t seem worth it, and to add insult to injury our local test centre is over an hour away (we live rurally)

So does anyone have experience of cancelling at the mo or any ideas on how to get out of it 😩
