PCR tests for a simpleton

I am a beleaguered, sleep-deprived mum of 3 young kids whose dad has just died.

Please explain to me what PCR tests and papers I need to complete to fly to Fuerfeventura this month, as I can't comprehend!

2 adults and 3 kids under 5.

So I understand we need passenger locator form and day 2 PCR test to come home but not sure why we need to get there
