If abroad, within 4 hours you have pretty much the whole of Europe.
What sort of break do you want - spa/city/culture/beach/history

Lisbon would fit the bill you could get the 30 min train to Cascais for beach.

I love sunny Barcelona in the winter but found the weather weird in April and May. Hot when the sun was out but we had a lot of heavy fog come in off the sea. Maybe we were unlucky (twice), so someone with more experience might know.

I’d say South of France too. Nice isn’t but the flights are cheap. Any of the towns and villages by the sea on either side are fabulous though. The train from Nice stops at them all so easy DIY transfers.

I liked Nice old town, lots going on. And like you say so easy to get the train to Cannes, St Tropez one way or Monaco the other way.
