If you’re happy to be a 15 minute taxi spin from Galway city centre I’d recommend The Twelve hotel.
Otherwise the House hotel in the city centre.
For Athlone - try the Sheraton right in the town centre.

The G hotel in Galway is also nice - within 15-20 mins walking distance of the city centre
