Does anyone understand the rules once France goes Amber on Sun? Do unvaccinated over 12s travelling with vaccinated parents still need to isolate? And if not what are the total tests in and out that are now required?

No, 12+ travelling with vaccinated parents do not need to isolate either way.
to enter France - PCR or (more likely given timing) LFT within 24h of travel
to return to UK - LFT within 72h before departure (same for parents)
Day 2 PCR for all 4+
