A good place to stay 1 night between Herts and South Cornwall

We are travelling on the first weekend of the Summer holidays and thinking of breaking up the trip to Cornwall as the traffic is going to be horrendous and wondered if anyone had any good recommendations of somewhere to stay for 1night on the way.

The Devon Hotel

We are stopping overnight in Bath on our way down but just going to Devon initially so may not be far enough over for you. Lots of nice places to stay there.
